This past November, we decided to capture the essence of autumn in two stages. We processed the olives in two distinct pressings, separated by a two-week interval.

We live every moment of the process: from the second the olives enter the mill until the oil glows inside the bottle. This "oli del raig" (freshly pressed oil) is the result of our second harvest at Xalanda Farm, a family project born from a deep love for the land.
We use organic farming methods and care for each Arbequina olive tree with patience, allowing the fruit to ripen at its own pace.
The olives are hand-picked and transported in small, ventilated crates (maximum 16 kg) to guarantee freshness. Less than an hour passes from the moment they arrive at the mill until pressing begins, ensuring exceptional quality.

Upon arrival at the mill, everything is prepared to guarantee hygiene and safety: clean and disinfected plastic supports.
We personally handle the transfer of the crates to the tipping system, exercising the utmost care to avoid bruising and to preserve the integrity of every single olive.
