We are writing the first chapters of the Xalanda story. This is only the estate’s second harvest—a gift from olive trees that, in their third year, are overflowing with vitality and strength.

This past November, we decided to capture the essence of autumn in two stages. We processed the olives in two distinct pressings, separated by a two-week interval.

The oil you have before you is an exclusive blend of these two batches: a fusion that unites the vibrant freshness of the first harvest with the slightly more settled nuances of the second. A perfect balance born from patience and respect for the tree's natural rhythm.

We live every moment of the process: from the second the olives enter the mill until the oil glows inside the bottle. This "oli del raig" (freshly pressed oil) is the result of our second harvest at Xalanda Farm, a family project born from a deep love for the land.

We use organic farming methods and care for each Arbequina olive tree with patience, allowing the fruit to ripen at its own pace.

The olives are hand-picked and transported in small, ventilated crates (maximum 16 kg) to guarantee freshness. Less than an hour passes from the moment they arrive at the mill until pressing begins, ensuring exceptional quality.

Every bottle is the result of constant monitoring and reflects our dedication to sustainable cultivation. The result is a flavorful, balanced oil full of nuances that transmit the strength of our land.

What does "oli del raig" mean?

"Oli del Raig": Pure Essence, Unfiltered 

It is the oil obtained directly from the freshly pressed fruit—unfiltered and undecanted—to preserve all its natural flavors and properties.

Note on Purity: Being a completely natural and unfiltered product, it is normal for a small deposit or "sediment" to appear at the bottom of the container after a few days. This sediment is not a defect; on the contrary, it is physical proof of its authenticity and that you are enjoying a "living" oil, rich in olive micro-particles that maintain the full intensity of its flavor.

The olives are hand-picked using gentle movements that preserve the branches and the vitality of every tree.

At Xalanda Farm, each olive tree is tended with the same dedication, without haste and regardless of yield.

Once gathered, the olives are delicately transferred into ventilated crates, preventing any damage during their journey through the estate.

This is the starting point of a process dedicated to keeping the natural quality of the fruit intact.

We strictly respect the weight limit per crate at the source to prevent the fruit from being crushed and to guarantee its freshness.

Once the day's harvest is complete, all olive crates are stored in a chamber with controlled temperature and humidity, away from natural light and with restricted access.

This step is essential to maintain freshness and prevent any alteration of the fruit before it reaches the mill.

Delicacy Until the Final Step

Upon arrival at the mill, everything is prepared to guarantee hygiene and safety: clean and disinfected plastic supports. 

We personally handle the transfer of the crates to the tipping system, exercising the utmost care to avoid bruising and to preserve the integrity of every single olive.

The olives reach the hopper and their journey begins. They move up the conveyor belt to the scale, where their weight is precisely verified. From there, they enter the pressing and centrifugation phase directly, transforming into our "oli del raig"—fresh, vibrant, and full of life.

At Xalanda Farm, we don’t just claim to make great oil; we prove it. The data below are not promises—they are certified facts. All analyses have been conducted externally and independently by Lluís Jané Busquets Laboratory, an entity with the highest technical accreditation from ENAC (No. 918/LE1868 under ISO 17025) and officially recognized by the International Olive Council (IOC).

This double seal guarantees that our oil’s quality has been verified with the utmost scientific rigor and impartiality. The results confirm that, in this second harvest, we have achieved levels of health and freshness that approach the theoretical limit of perfection.

Why do these figures matter? The only objective way to measure excellence is through chemistry. A real acidity of 0.10% (eight times below the legal limit for Extra Virgin) is synonymous with absolute fruit health: it certifies that the olives were hand-picked without damage and processed immediately. Furthermore, a peroxide index as low as 4.2 is proof of a true cold extraction without oxidation, ensuring the oil maintains its health properties, natural antioxidants, and fresh flavor for much longer.

In 2024, we already presented a high-quality Extra Virgin oil, but our systems engineering DNA and commitment to continuous improvement pushed us further. The optimization of harvest protocols and the exhaustive control of the preservation and cold chains have allowed this year's analytics to show an impressive technical evolution.

While last year we were already well below legal limits, in 2026 we have managed to further reduce key indicators of oxidation and degradation. This improvement is no accident; it is the direct result of an infrastructure designed to minimize the time between the tree and the press.
